Hello Possums, here is my favorite muffin recipe, upon Charlotte’s request.

This recipe is very flexible. I like to make them either with just a mashed banana, or banana and choc chips, but you can really chuck in your own favorite combo of flavours and be guaranteed of success.

1. mix 1 cup unsweetened plain or vanilla yogurt and 1 cup rolled oats together and leave to soak in the fridge for half an hour.

2. after half an hour stir the following things in, making sure you fold the flour in last to avoid over beating: 1 egg, 1/2 cup vegetable oil (I use extra virgin olive oil, but it works ok with canola oil or whatever you prefer), 1/2 cup sugar, your own favorite combinations of fruit, nuts, chocolate, spices, 1 1/4 cup self raising flour (or plain flour plus one teaspoon baking powder).

3. the mixture makes 12 large muffins (1 tray) or 24 little muffins (2 trays – these are very cute). Grease your tray and spoon the mixture in. Cook for about 15 minutes in a fairly hot oven, 220 Celsius. You might need 20 minutes for the large muffins, but its worth checking them at the 15 minute mark and giving them the extra time until they are golden brown on top, and no longer squishy – they should spring back to the touch. Eat them when they cool or even before they cool down. Delicious!

They last quite well for two or three days without going dry – good for school lunch boxes.

    Potluck suppers are popular here. Everyone brings a different dish and we all tuck in … if you aren’t careful, the potluck can turn into a night of desserts or salads … so for organised sorts, people are assigned different courses! There is probably something similar in Australia…

  11. Hi Kate, wow, pecans – yum, yum, and blueberries – oh delicious! Oh, I can just imagine how yummy they would be warm. I’ll pop over to your site, just to really torture myself (ie. looking and not eating).

    Yes, we do have casserole nights or planned dinner parties where different people bring along a course, but not the pot luck idea where you could end up with no starters or no main course! That sounds really funny to me.

    I’m now eating yet another muffin … I have resolutely decided to go to the gym tomorrow morning! My blog entry took a bit longer to write since my mum phoned and there I was reduced to one-finger typing of the silent kind so she didn’t ask, “Is that the computer I can hear in the background?” which is the ultimate of rude in my mum’s book.

    Charlotte has suggested lemon zest! This opens up lots of possibilities too, eg with choc chips, or poppy seeds.

    I’ve just tried the muffin recipe with fruity yogurt from the fridge, therefore I used only 1/4 sugar. I also substituted 1/4 c of the flour to almond meal. ( I think it was an effort to be more healthy … a 1/4 cup at a time!!!)

    Just tried these also with some organic honey and almond yoghurt + mashed banana – I only used 1/4 cup sugar and used olive oil, results sensational!

    actually, you don’t cut the sugar by using flavored yogurt because it is generally full of sugar. only plain yogurt has a low sugar content.

    Hi there, I was searching for a muffin recipe that would be “healthy” – and something that my super picky 2 and 3 year olds would eat. They will not eat oatmeal, or most fruit, and they will only eat yogurt sometimes. So, I wanted to make these muffins for their lunch box tomorrow … here are my modifications:

    – vanilla yogurt + splash of vanilla
    – used only 1/4 c of oil, and added 1/4 c applesauce
    – didn’t have regular oats, so used 4 packets of quaker instant oatmeal (2 banana and 2 strawberry)
    – used about 1 1/4 t baking powder
    – fresh strawberries chopped up
    – made 2 dozen mini muffins, baked exactly 15 minutes at 425 F

    My husband, who rolled his eyes at my “expirament” is now on his 4th, telling me they taste like strawberry shortcake without the whip cream :-)
