		<description>Hi there, I was searching for a muffin recipe that would be &quot;healthy&quot; - and something that my super picky 2 and 3 year olds would eat. They will not eat oatmeal, or most fruit, and they will only eat yogurt sometimes. So, I wanted to make these muffins for their lunch box tomorrow ... here are my modifications:

-- vanilla yogurt + splash of vanilla
-- used only 1/4 c of oil, and added 1/4 c applesauce
-- didn&#039;t have regular oats, so used 4 packets of quaker instant oatmeal (2 banana and 2 strawberry)
-- used about 1 1/4 t baking powder
-- fresh strawberries chopped up 
-- made 2 dozen mini muffins, baked exactly 15 minutes at 425 F

My husband, who rolled his eyes at my &quot;expirament&quot; is now on his 4th, telling me they taste like strawberry shortcake without the whip cream :-)
